Makes 4 taco rice bowls (4 servings) | Serving size: 1 bowl with 5 ounces rotisserie chicken, 3/4 cup brown rice, about 1/2 cup black beans, 1/4 cup salsa, 1 cup lettuce, 1/4 cup Greek yogurt, and 1 lime wedge | Prep: 10 minutes | Cook: 8 to 10 minutes | Rest: 0 minutes | Total: 18 to 20 minutes

Ingredients:

  • 1 1/4 pounds skinless rotisserie chicken breast, meat removed from the bones and cut into bite-size pieces
  • 3 cups cooked brown rice, chilled and loosened
  • 1 cup prepared salsa, divided
  • 1 (15-ounce) can of canned black beans, drained and rinsed (about 1 3/4 cups)
  • 4 cups shredded lettuce, washed and thoroughly dried
  • 1 cup plain Greek yogurt
  • 1 medium lime, cut into 4 wedges

Directions:

Complete the listed prep, then combine the rotisserie chicken, cooked brown rice, 1/2 cup salsa, and black beans in one 5-quart nonstick sauté pan; cover and cook over medium-low heat for 8 to 10 minutes, stirring every 2 minutes, until the mixture is steaming and every component reaches 165°F. Divide the hot mixture among 4 bowls and top each portion served immediately with 1 cup lettuce, 2 tablespoons of the remaining salsa, 1/4 cup Greek yogurt, and 1 lime wedge.   • 1 1/4 pounds cooked ground turkey, lean and crumbled
  • 3 medium zucchini, quartered lengthwise and sliced 1/2 inch thick (about 4 cups)
  • 1 (24-ounce) jar prepared marinara sauce (about 3 cups)
  • 4 cups cooked chickpea pasta, chilled and separated
  • 2 teaspoons salt-free Italian seasoning
  • 1 cup shredded part-skim mozzarella
  • 1/2 cup loosely packed fresh basil leaves, torn

Directions:

Combine the zucchini, 1 cup marinara, and Italian seasoning in one 6-quart deep nonstick skillet, cover, and cook over medium heat for 7 to 9 minutes, stirring twice, until the zucchini is crisp-tender. Stir in the cooked ground turkey, cooked chickpea pasta, and remaining marinara; cover and cook over medium-low heat for 8 to 9 minutes, stirring every 2 minutes, until the center of the mixture and all turkey and pasta reach 165°F. Divide into 4 portions, then add 1/4 cup mozzarella and 2 tablespoons basil only to each portion served immediately. Refrigerate unserved portions separately from four portions each of mozzarella and basil at 40°F or below within 2 hours for up to 4 days total from the earliest turkey or pasta cook date, marinara or mozzarella opening date, or zucchini or basil preparation date, shortened by any earlier package use-by or after-opening limit. Reheat one un-topped portion, covered, in a microwave-safe container on high for 2 to 3 minutes, stirring halfway through, until it reaches 165°F throughout, then add one reserved portion each of mozzarella and basil.

Ingredients:

  • 1 pound cooked shrimp, peeled and deveined with tails removed, thawed in the refrigerator if frozen
  • 1 cup pasteurized liquid egg whites
  • 4 cups cooked cauliflower rice, chilled and loosened
  • 2 cups frozen peas and carrots, used from frozen
  • 1/4 cup coconut aminos, divided
  • 4 medium garlic cloves, minced
  • 1 cup thinly sliced green onions, white and green parts separated (about 1/2 cup each)

Directions:

Heat one dry 14-inch nonstick skillet over medium heat for 1 minute, add the egg whites, and cook for 2 to 3 minutes, pushing the set curds toward the center, until no liquid egg remains and the curds reach 160°F; transfer them to a clean plate. Add the frozen peas and carrots, cauliflower rice, garlic, green-onion whites, and 2 tablespoons coconut aminos to the same skillet; raise the heat to medium-high and stir-fry for 7 to 9 minutes, stirring and turning the mixture every minute, until the vegetables are hot, excess moisture has evaporated, and the cauliflower rice browns in spots. Add the cooked shrimp, cooked egg whites, and remaining coconut aminos, and stir-fry for 3 minutes, turning constantly, until every shrimp and the complete mixture reach 165°F; divide among 4 bowls and finish each portion served immediately with 2 tablespoons green-onion greens. Refrigerate unserved portions separately from four portions of green-onion greens at 40°F or below within 2 hours for up to 3 days total from the earliest shrimp thaw or cook date, cauliflower-rice cook date, egg-white or coconut-aminos opening date, or garlic, vegetable, or green-onion preparation date, shortened by any earlier package use-by or after-opening limit. Reheat one un-topped portion in a 14-inch nonstick skillet over medium heat for 4 to 6 minutes, stirring often, or covered in a microwave-safe bowl on high for 2 to 3 minutes, stirring halfway through, until the shrimp, egg, and vegetables reach 165°F throughout, then add one reserved portion of green-onion greens after heating.

Ingredients:

  • 1 1/4 pounds cooked chicken breast, boneless, skinless, and cut into bite-size pieces

  • 1/2 cup prepared buffalo sauce
  • 1 cup plain Greek yogurt
  • 4 large celery stalks, thinly sliced (about 2 cups)
  • 6 cups chopped romaine, washed and thoroughly dried
  • 1/2 cup thinly sliced green onions

Directions:

Arrange the cooked chicken and roasted sweet potatoes in separate halves of one 3-quart microwave-safe dish, cover with a vented lid, and microwave on high for 5 to 7 minutes, stirring each half separately after 3 minutes, until every chicken piece and all the sweet potatoes reach 165°F. While the dish heats, whisk the buffalo sauce and Greek yogurt in a medium bowl to make 1 1/2 cups sauce, then divide it into four equal 6-tablespoon portions; for each portion served immediately, toss one-fourth of the hot chicken with one sauce portion and plate it with one-fourth of the sweet potatoes, 1/2 cup celery, 1 1/2 cups romaine, and 2 tablespoons green onions. Reheat one chicken and sweet-potato portion, covered, in a microwave-safe container on high for 2 to 3 minutes, stirring halfway through, until both reach 165°F throughout, then toss the chicken with one reserved 6-tablespoon sauce portion and plate it with one reserved portion each of celery, romaine, and green onions.

Why It Works: Buffalo flavor gives you a clear craving hit, while the sweet potato makes the plate feel satisfying. The protein is already cooked, so dinner becomes assembly. This fits balanced meals and clean eating recipes when the goal is simple, filling, and repeatable.

5. Cottage Cheese Pesto Chicken Bowls

Makes 4 pesto chicken quinoa bowls (4 servings) | Serving size: 1 bowl with 5 ounces cooked chicken, 3/4 cup cooked quinoa, 1 cup spinach, 1/2 cup tomatoes, and about 1/2 cup cottage cheese pesto sauce | Prep: 12 minutes | Cook: 0 minutes | Rest: 0 minutes | Total: 12 minutes

Ingredients:

  • 1 1/4 pounds cooked chicken breast, boneless, skinless, chilled, and sliced
  • 1 1/2 cups low-fat cottage cheese

  • 2 cups cherry tomatoes, halved
  • 4 cups baby spinach, washed and thoroughly dried
  • 1/4 cup lemon juice

Directions:

Blend the cottage cheese, pesto, and lemon juice in one countertop blender with at least a 4-cup capacity for 1 to 2 minutes, stopping once to scrape the sides, until smooth. Divide the cooked quinoa and spinach among 4 bowls, add one-fourth each of the chilled cooked chicken and cherry tomatoes, and spoon one-fourth of the sauce, about 1/2 cup, over each bowl to make 4 servings. Serve immediately or cover and refrigerate at 40°F or below for up to 3 days total from the earliest chicken or quinoa cook date, cottage-cheese or pesto opening date, or tomato, spinach, or lemon preparation date, shortened by any earlier package use-by or after-opening limit; discard after more than 2 hours above 40°F, or 1 hour above 90°F.
